All of the information I list in these pages is related to actual experience I have with barbecue. I first started out years ago using the bullet / R2D2 / El Cheapo Brinkman (ECB) smokers. I developed my technique there before moving on to a New Braunfels Black Diamond (NBBD) that I was lucky enough to find on Craigslist.
With some basic attention to detail such as fire maintenance and food preparation, most anyone can make excellent barbecue. I don’t believe that people can’t cook, but that some just don’t pay attention where needed. That’s one of my motivations in putting these pages together, is to provide a little guidance for people who are looking for information on how to do barbecue.
